Of course, they do explain that in TNG. I'm fine with that, but in hardcore science fiction, I look for more alien aliens. John Scalzi is great at having his extraterrestrials be truly alien. He doesn't even make the mistake of having the more similar to humans be the "good" aliens. I adore his Old Man's War novels, even if they are not as warm and fluffy as Star Trek. And I'd love to have a heart visible through the skin, with the warm glow that shows everyone I'm alive...but I'm digressing I know.
